Pecan Cheesecake Pie Recipe

Ingredients:

For the Crust:
– 1 sleeve graham crackers, finely crushed
– 5 tbsp melted butter
– 1/4 cup packed brown sugar
– Pinch of salt

For the Cheesecake:
– 3 (8 oz) blocks cream cheese, softened
– 1 cup packed brown sugar
– 3 large eggs
– 1/4 cup sour cream
– 2 tbsp all-purpose flour
– 1 tsp vanilla extract
– 1/4 tsp salt

For the Topping:
– 4 tbsp butter
– 1/2 cup packed brown sugar
– 1/2 tsp cinnamon
– 1/4 cup heavy cream
– 1 3/4 cups whole or chopped pecans
– Pinch of salt

Instructions:

1. **Preheat the Oven:** Preheat your oven to 325°F (163°C). Spray a 9-inch springform pan with cooking spray.

2. **Prepare the Crust:** In a mixing bowl, combine the crushed graham crackers, melted butter, brown sugar, and a pinch of salt. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form an even crust.

3. **Make the Cheesecake Filling:** In a large bowl, beat the softened cream cheese and brown sugar together using a hand mixer until smooth. Add the eggs one at a time, beating well after each addition. Mix in the sour cream, flour, vanilla extract, and salt until fully combined.

4. **Assemble and Bake:** Pour the cheesecake mixture over the prepared crust in the springform pan. Wrap the bottom of the pan in aluminum foil and place it on a baking sheet. Bake in the preheated oven for 1 hour.

5. **Cool the Cheesecake:** Once the cheesecake has finished baking, turn off the oven and slightly open the door. Allow the cheesecake to cool in the oven for 1 hour. After that, remove the cheesecake and let it cool completely in the refrigerator for at least 5 hours.

6. **Prepare the Topping:** In a skillet over low heat, melt the butter and brown sugar together until the mixture begins to bubble. Stir in the cinnamon, heavy cream, pecans, and a pinch of salt. Remove from heat and let the mixture cool for about 20 minutes.

7. **Add the Topping and Serve:** Pour the cooled pecan topping over the chilled cheesecake. Slice, serve, and enjoy this delicious Pecan Cheesecake Pie!
