Chocolate-Dipped Yogurt Cookies with Almonds

Ingredients:

  • 150 grams of yogurt
  • 120 grams of sugar
  • 380 grams of flour
  • 8 grams of baking powder
  • 120 milliliters of vegetable oil
  • Vanilla essence or vanillin
  • 200 grams of semi-sweet chocolate
  • 2 tablespoons of almonds

Preparation:

Making the Dough

  1. In a large bowl, whisk together the yogurt, sugar, vegetable oil, and vanilla essence until creamy and smooth.
  2. Add the flour and baking powder, mixing thoroughly until all ingredients are well combined.

Shaping the Cookies

  1. Once the dough is ready, shape it into small balls using your hands, then gently flatten them to form cookies of your desired size.
  2. Use cookie cutters if you want to create fun shapes.

Baking

  1. Arrange the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for about 20 minutes, or until golden brown.
  2. Once baked, remove them from the oven and allow them to cool completely.

Making the Chocolate Coating

  1. While the cookies cool, prepare the chocolate icing by melting the semi-sweet chocolate in a bain-marie or microwave-safe bowl. Once melted, stir in the chopped almonds until fully coated.

Coating the Cookies

  1. Dip each cookie into the chocolate mixture, ensuring they are completely covered.
  2. Let any excess chocolate drip off, then place the cookies on parchment paper to set.

Setting the Chocolate

  1. Allow the cookies to rest at room temperature until the chocolate hardens completely. Though it might take some time, the delicious result will be worth the wait!
