Ingredients:
- 1 Tbsp butter or olive oil (I prefer a mix)
- 1 minced garlic clove
- 1 cup finely shredded cabbage (lightly packed)
- 2 lightly beaten eggs
- Salt and pepper to taste
Preparation:
- Heat a non-stick pan over medium heat and add the butter or oil, spreading it around.
- Sauté the garlic for about 20 seconds until fragrant.
- Add the cabbage and cook, stirring often, for 3-5 minutes until softened (longer for caramelization).
- Spread the cabbage in a thin layer, then pour in the eggs, tilting the pan to distribute them.
- Let the eggs cook for 15-20 seconds, then gently fold until fully cooked.
- Remove from heat and serve immediately.
