Cheesy Chicken Fritters with Garlic Aioli Dip

Ingredients for Chicken Fritters:
– 1 1/2 lbs chicken breasts (about 3 large breasts)
– 2 large eggs
– 1/3 cup mayonnaise
– 1/3 cup all-purpose flour (or cornstarch or potato starch for a gluten-free option)
– 4 oz mozzarella cheese, shredded (about 1 1/3 cups)
– 1 1/2 Tbsp chopped fresh dill
– 1/2 tsp salt, or to taste
– 1/8 tsp black pepper
– 2 Tbsp extra light olive oil (or any high-heat cooking oil) for sautéing

Ingredients for Garlic Aioli Dip (Optional):
– 1/3 cup mayonnaise
– 1 garlic clove, pressed
– 1/2 Tbsp lemon juice
– 1/4 tsp salt
– 1/8 tsp black pepper

Instructions:

1. **Prepare the Chicken Mixture:** Using a sharp knife, dice the chicken breasts into 1/3-inch thick pieces and place them in a large mixing bowl. Tip: Slightly freezing the chicken makes it easier to slice.

2. **Combine Ingredients:** Add the remaining batter ingredients to the bowl: eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Mix well until everything is combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best results.

3. **Cook the Fritters:** Heat a large non-stick skillet over medium heat and add 2 tablespoons of oil. When the oil is hot, drop heaping tablespoons of the chicken mixture into the pan. Flatten the tops slightly with the back of your spoon. Sauté uncovered for 3-4 minutes on the first side, then flip and cook for another 3 minutes on the second side, or until the fritters are golden brown and fully cooked through. Repeat with the remaining mixture, adding more oil as needed.

4. **Make the Garlic Aioli Dip (Optional):** In a small bowl, combine mayonnaise, pressed garlic, lemon juice, salt, and pepper. Stir until smooth and well mixed.

5. **Check for Doneness:** To ensure the fritters are cooked through, cut one in half; the chicken should be completely white inside. If the fritters are browning too quickly, reduce the heat slightly.

6. **Serve and Enjoy:** Serve the chicken fritters warm with the optional garlic aioli dip on the side.
