Ingredients:

– 1 can (14.5 oz or 410 g) diced tomatoes (drained)
– 1 cup (240 ml) salsa
– 1 1/2 cups (170 g) shredded cheddar cheese (or Mexican blend cheese)
– 1 can (10 oz or 283 g) enchilada sauce (or your favorite taco sauce)
– 1/2 cup (120 g) sour cream (optional)
– Fresh cilantro or green onions for garnish (optional)

Instructions:

1. **Cook the Pasta Shells:**
– Bring a large pot of salted water to a boil and cook the jumbo pasta shells according to the package instructions until al dente.
– Drain and rinse the shells with cold water to stop the cooking process. Set them aside.

– In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks.
