Ingredients:
– 1 onion, chopped
– ½ red bell pepper, chopped
– ½ green bell pepper, chopped
– ½ yellow bell pepper, chopped
– 2 tsp minced garlic
– ½ tsp dried oregano
– ½ tsp dried basil
– Salt and pepper, to taste
– 1 can diced tomatoes
– 2 cups beef broth
– ⅔ cup rice
– 1 ½ cups shredded cheddar cheese

Instructions:

1. Heat a skillet over medium-high heat and add the ground beef, onion, and bell peppers. Cook until the vegetables are softened and the beef is fully browned. Drain any excess fat.

2. Add minced garlic, oregano, basil, salt, and pepper to the skillet. Stir to combine and sauté for an additional 30 seconds.

3. Stir in the diced tomatoes, beef broth, and rice.

4. Bring the mixture to a light boil, then reduce the heat to a simmer. Cover and cook for 20 minutes.

5. Sprinkle shredded cheese over the mixture, cover, and continue cooking until the cheese has melted.
