– 1 1/2 to 2 cups beef stock

1. **Prepare the Beef:** Season the beef tips with salt and pepper, then toss them in flour to coat evenly.

2. **Sear the Beef:** In a large skillet over medium-high heat (or directly in your Instant Pot using the sauté function), melt the butter. Add the beef in batches, searing on all sides until browned and crusty. Transfer the seared beef to a plate and repeat until all the beef is seared.

3. **Cook the Onions:** Add the diced onions to the skillet and cook for about 2 minutes, scraping up any browned bits from the bottom of the pan with a wooden spoon.
